Mt Seymour Provincial Park is a simple and effective way to escape by hire car from the city. A road winds most of the way up to the peak of Mt Seymour, or you can take the chair lift. There are several hiking trails here for those a little more ambitious.
Another spot to go to is Vancouver Island. It's heavily settled on the east coast, but still pleasant, while the rest of the island is unspoiled, particularly the dramatic Pacific-facing west coast. A good day trip by hire car is to drive the Queen Charlotte strait, which is scattered with islands and inlets, best seen from Port Hardy, on the northeast of the island.
